Would you believe you can prep a healthy Red Velvet Cake and silky cream cheese frosting in under five minutes? Nutritious ingredients like eggs, almonds, fat free buttermilk and fresh fruit décor contribute up to 5 grams of protein and 4 grams of fiber per cupcake! Enlist the help of your blender and use those extra minutes reminding somebody why we celebrate V Day. The only thing quicker than prepping these cupcakes is how fast my friends reverted back to their single digit years when I set up a “cupcake decorating bar” beside the booze at my buddy’s party Saturday.
