Jambalaya, a great dish that often contains too many calories and fat. Improve this by using turkey sausage as opposed to regular, eliminate almost all the butter and add kale to eliminate half the rice. The Kale also adds color to the dish and I promise you, you will NOT miss the additional rice. This dish is really quick and easy so give it a try.
2 cups pre cooked brown basmati rice
2 cups steamed chopped kale
1 green pepper diced
2 Trader Joes Andouille turkey sausages diced
1 red onion diced
2 tomatoes diced
1 tablespoon of tomato paste
1 cup of chicken broth
2 tablespoons of garlic
2 pre cooked turkey breasts diced into ¼ inch pieces
1 teaspoon of chili powder
2 teaspoons paprika
1 teaspoon of sea salt
1 teaspoon of crushed black pepper
Directions:
Heat up some olive oil and ½ teaspoon of butter in a large frying pan. Add the diced onions, garlic, tomatoes and green pepper along with salt and crushed black pepper. Saute till tender. Add the diced sausages and render the fat out of them. Then add the chili powder, paprika and tomato paste. Cook for two minutes to combine flavors. Add the diced turkey breasts and the cooked rice along with the chicken broth. Finish by adding the kale and cook for about 5 minutes till all ingredients are warm. Enjoy
